Sweet and Spicy Chickpea Rolls

It is always a hassle to prepare kid’s lunchboxes. You need to prepare something that will click with your child taste bud is packed with nutritional value and that can be prepared in a short period of time.
Today’s recipe, Sweet and spicy chickpea roll fulfils all the aforementioned criteria and hence can be
considered as the best Dabba dish.

 

INGREDIENTS QUANTITY
All-purpose flour ¾ cup
Whole wheat flour ½ cup
Water ½ cup
Boiled Chickpeas 1 cup
Diced onion ½ cup
Cubed carrots ¼ cup
Finely chopped cabbage ¼ cup
Finely chopped tomato ½ cup
Olive Oil 2 tablespoon
Cumin Seed 1 teaspoon
Black pepper ½ teaspoon
Garam masala 1 teaspoon
Coriander powder ½ teaspoon
Cumin powder ½ teaspoon
Red chilly powder 1 ½ teaspoon
Grated ginger and garlic paste 1 tablespoon
Minced chilly 2
Olive oil 3 tablespoon
Salt 1 ½ teaspoon
Sugar ½ teaspoon

 

Method

  1. First of all, take a big bowl. Pour the all-purpose flour and whole wheat flour in it. Add ½ teaspoon salt to it along with 1 teaspoon refine oil. Mix the content for a 30 second or so. Gradually add water to the content, to prepare the dough. Make sure is neither too wet nor dry. Keep the dough aside for 20 minutes.
  2. Next, heat a pan and pour olive oil into it. Add cumin after 3 second and so and let it sizzle. Add the grated garlic and ginger paste to it. Cook it for about a minute or two. Next, add the diced onions to it. Saute it in a low flame till it assumes a golden colour.
  3. Add the tomatoes to the pan. Sizzle it for 5 minutes. Having done so, add the rest of the vegetables ( carrot, cabbage and chickpeas) and stir fry them in a medium flame for about 8-9 minutes.
  4. Add salt, garam masala, red chilli powder to the content consequently. Let the masala amalgamate with the filling. Cook them for about 8 minutes. Remove the content from the pan to a fresh bowl to ease the process of filling the wrapping.
  5. To prepare the wrapping, start making small balls out of the lump of dough. Roll the balls out using a rolling pin.
  6. Heat a griddle in a very low flame and smear olive oil upon its surface. After 20 seconds or so, put the flatbread upon it. Cook it lightly on one side; don’t then flip it to the other side. Spread the fillings on the quarterly cooked side. If you want to you can also add vinegar-soaked onion slices, cucumber pieces and coriander leaves in addition to the prepared stuffing. It is entirely optional. Roll the wrapping tightly. Continue to make the rest of the rolls similarly.

 

Servings: Makes 3-4 rolls
